CLASS INFORMATION

 D & G Occasions is happy to offer a variety of courses to meet your decorating needs. Currently we are offering classes in:

  • Chocolate & Candy
  • Fondant Skills
  • Fondant Cake Series
  • Cake Decorating Series
  • 3-D Gelatin Art Series

CHOCOLATE & CANDY

All chocolate candy classes are hands-on; you make the candy, take it home, eat, and enjoy! You need only take 1 class of each type. Descriptions of classes are listed below. Students are responsible for purchasing the molds that are used in class and the instructor will supply the product.

Dates for all candy classes will be determined by the student and instructor.

Class fee must be paid in cash or check made to the instructor on the day of the class. Classes often fill quickly so don't wait until the last minute.


Candy 1

Cost: $30 - 3 hours

This is a unique class. You will color (with dusting powders) 12-14 different flowers, pack them, arrange them in a pot, and take them home. No mold is required.

Candy 2

Cost: $30 - 3 hours

You will learn how to make filled candies - cherry cordials, peanut butter cups, caramels, and more. For this class you will need to purchase 3-4 molds.

Candy 3

Cost: $30 - 3 hours

In this class you will make double sided (3-D) chocolate. We will be making the 3-D Christmas Sleigh and learning to use edible images and you will also get recipe on how to make chocolate clay. You will need to purchase 3-4 molds.

Candy 4

Cost: $55 - 4 hours

In this class you will learn the how-to's of melting and painting with chocolate, dipping and decorating, using luster dusts on chocolate, making peanut butter cups, using edible images with chocolate, using double sided (3-D) mold, and how to do the basic cake pop.

 Fondant Cake Series

Join Food Network Chocolate Challenge competitor, Chef Lucy Martin, as she demonstrates a variety of techniques using fondant, gum paste, royal icing, and other mediums.  Each course is designed to stand on its’ own and uses different techniques each time.   In every course students will design and create their own tiered cakes using methods shown.  There is a small list of materials required for each class and 50% deposit is required at time of booking.

Fondant Skills Course

Level - Beginner/Intermediate

In this class students will be assisted in designing and creating their own 2 tier special occasion cake following the demos on various techniques. 

 

 Topics include:

  • handling and covering the cake with fondant
  • stacking and support of the cake
  • transporting the cake
  • design concepts (colors, themes, styles, etc)

 

Some of these techniques include: gathered pleats, ribbon insertion, lace, multi-colored loopy bow, monograms, drapery, royal icing piping patterns, and piped butterflies.  

                                                    

 





Techniques vary in every Fondant Skills Course so students can take more than one class and always learn new things!  Efforts are made to show specific techniques requested.

Topsy Turvy Course

Topsy Turvy Celebration Cake - Previous fondant experience requiredStudents will love this rewarding and creative experience! 

In this class you will learn:

  • how to carve your  cakes
  • covering them with fondant
  • choose your own color palette for this fun cake
  • techniques include: curlicues, quilling flowers, applique flowers, ruffle flowers, drapery, stripes, bows.

CAKE DECORATING SERIES

Chocolate Ganache Torte & Chocolate Roses

Fundamentals of Cake Decorating

New to cake decorating?

Decorating a cake takes more than just creativity and a steady hand. In this 5 1/2 hour intensive classyou will decorate your own butter cream cake while picking up tricks of the trade from Chef Martin. 

In this class students will learn:

  • how to cut cakes to torte them
  • make Swiss Meringue Butter Cream
  • trouble shooting butter cream
  • fill and cover torte flawlessly
  • simple piping borders, rosettes, leaves, and writing.
 

Each student will be supplied with their own cake to work on and take home to enjoy with friends and family!

Piping Boot Camp

Level - Beginner 4.5 Hour Course

Piping is a foundation of cake decorating.  Whether you are a beginner or just in need of a little help to get to the next level, join us as we use a variety of tips to create versatile and fun borders.  We will also be practicing several flowers; roses, chrysanthemums, daisies, sunflowers, and others.

3-D Gelatin Art

Chef Melina De La Paz, will teach you how to amaze your guest or future customers when you learn how to make these beautiful and delicious works of art. We will transform simple ingredients into astonishing creations that will make you the center of attention at your next event.

Registration policy:
Class registration is on a first-come-first-served basis. 50% of payment is due at booking and the other 50% is due the day of the class. As a general rule, there are NO REFUNDS. If circumstances arise and you find yourself unable to attend we can arrange a later date for you to take the class or you can transfer your booking to a friend or family.


Basic Crystal Clear Gelatin
Level - Beginner Class 1
Cost: $65
Duration: 3 Hour Course

In this class students will learn:

  • how to make crystal clear gelatin, which will be our canvas for the beautiful creation
  • how to make colored gelatin for our flowers
  • how to flavor and color the gelatin to your own style
  • 2 or 3 different types of flowers using the syringe technique
  • tricks on how to handle, store, and unmold your gelatin.

This class is very hands on. All materials are included. Please bring an insulated lunch box sized container to take all your creations with you.


"Gubia" Technique and Flowers

Level - Beginner Class 2
Cost: $65
Duration: 3 Hour Course

In this class students will learn:

  • Introduction to the "Gubia", a more efficient technique
  • 3 different types of flowers using the syringe technique
  • how to make the tres leches gelatin that will enhance the flavor of your dessert
  • how to make flavor layers

This class is very hands on. All materials are included. Please bring an insulated lunch box sized container to take all your creations with you.
